First off just want to say I'm not very good at making perogies. I've tried 3 times now and I would have to say that they have got better each time.
Here in Malaysia we have a small problem with getting the right ingredients for any western cooking job. for these bad boys I was really at the mercy of one particular ingredient - sour cream! The grocery store near my house doesn't always have sour cream in stock or perhaps it is a hot item and I never knew. I better get off my rant and on to my post.
I used a very simple recipe for the perogies
The shell
4.5 cups of all purpose flour (I used a bit more)
3 eggs
2 cups of sour cream
2 tbsp of butter
2 tbsp of oil (or more butter if that's your thing)
salt (you need a couple tsps or so)
basically you mix the wet items then add them to the flour (I thought it was more difficult)
make a ball or two and let stand covered for about 10-15 mins
The filling
4-6 baking or other large potatoes
1 cup of cheese shredded
2 tbsp of milk
optional more cheese! (cottage cheese, or soft cheese would do)
salt and pepper to taste
(you are just making flavourful mashed potatoes)
let the filling cool.
roll out your dough and use a cup/glass/circular cutter to make well... circles of dough!
put a spoonful of potato filling inside the dough and fold it to make the dumpling. use some water on your finger to seal the dough if need be.
in the mean time bring some salted water to a boil. Drop the perogies in the salted water. They will float when they are done (it takes about 10 minutes). fish them out and serve.... or.... DOUBLE DOWN BY POUTINEING THOSE BAD BOYS
Pountine them!
do everything as above except for one thing get a pan fired up with a bit of oil (or butter) and then once you drain the perogies pan fry them... not for long just to crisp them up. After crisping and browning drain the oil and let them sit. in a separate pan make some brown gravy or open a pack of poutine gravy(or any other instant gravy) put your perogies in a bowl, plate, or other such food receptacle and sprinkle some cheese on them, pour a generous amount of gravy on top and then top with more cheese.
